I hope you’ve had a lovely Christmas. We have had a really great Christmas this year, spent with friends and family and lots of festive food. This was also our first vegetarian Christmas and I can happily report that we made it! We had my nut roast en croûte for the main and for leftovers and we didn’t miss meat one bit. That’s quite a feat for us especially at Christmas but I guess when you’re in something 100% then you’re in. As usual, this time of year I share my Top 10 recipes of the year, these are the recipes you have loved most and that have been read the most. Spicy and totally addictive these halloumi fries are perfect for weekend snacking. 2018 was the year of halloumi fries and we love them!
No. 9 Vegetable Korma
A rich and fragrant vegetable korma, perfect for date night or meat-free Mondays. Easy to make, this korma is vegetarian and naturally gluten-free. This is also my daughter’s favourite curry, we eat a lot of curries in the first few weeks of switching to a vegetarian diet and this one is still a firm favourite.
No.8 Autumn Squash Soup
Warming and filling this Autumn Squash Soup is packed with flavour. Made with roasted squash and warming spices this is like a hug in a bowl. I love making soups, they are one of the easiest meals to make and for me are the perfect meal and the more vibrant they are the better!
No.7 Vegetarian Lasagne
A rich and creamy vegetarian lasagne, our all-time favourite lasagne recipe. Perfect for cooking ahead of time and having in the freezer for easy weeknight comfort food. This is on repeat in our house, we all love this, even meat eaters love this!
No. 6 Roast Cauliflower Salad
Lightly spiced roasted cauliflower with kale, creamy goat’s cheese, toasted walnuts, pumpkin seeds and pomegranate. I’ve been making this salad for almost a year now and it still goes down a treat.
No. 5 Irish Scones
Irish scones, made with buttermilk and sultanas, perfect for St.Patrick’s Day or any day! Serve warm with butter and jam and a nice big cup of tea. Ok, I’ll admit it, we don’t just make these for St.Patrick’s Day. These are hands down the one thing I like to bake the most and I quite like eating them too!
Smooth and creamy this broccoli and cauliflower soup is perfect for keeping you warm and toasty. This is a great soup for this time of the year and is so easy to make!
Creamy garlic mushroom pasta, a quick and tasty dinner. Garlicky mushrooms in a creamy sauce with herbs and chunky pasta. Perfect for busy weeknights. We LOVE this pasta, it’s one of my all-time favourite comfort foods and those garlic mushrooms? Yep, I love them!!
Warming and easy to make this vibrant Cauliflower and Chickpea Curry is packed with flavour. Perfect for a tasty weeknight dinner. And we have this almost every week, this is our favourite Friday night dinner.
And finally the top of the top 10 recipes of 2018. A fresh and zesty salad with warmly spiced crispy chickpeas and a tangy dressing. This was our recipe of the Summer. During last Summer’s heat wave this was a lifesaver! Fresh and zesty and light this salad is great served on its own or as a side dish, We made it for dinner, for bbqs and for lunch. Roll on Summer, I can’t wait to make this again!
This year’s top 10 recipes of 2018 were all about the veggies, which makes me so happy as we switched over to a vegetarian diet in August. I was a bit worried I might lose some of you but it looks like you really like the veggies too!
