King Prawn & Edamame Stir Fry

  • 240 g sustainable king prawns
  • 2 cloves of garlic , sliced thinly
  • 1 small red chili , finely chopped
  • 100 g edamame
  • 4 spring onions
  • 100 g soba noodles
  • 1 tsp coconut oil
  • 1 tsp fish sauce
  • 1 tsp tamari , or low sodium soy sauce
  • Juice of 1 lime
  • Small bunch of coriander
  • Lime wedges to serve


  • Bring a saucepan of water to the boil, and cook the noodles according to the packet.
  • Heat the oil in a wok, add the garlic and chili and cook for one minute.
  • Add the king prawns, fish sauce and tamari and cook until the prawns are pink, about 5 minutes.
  • Then add the spring onions, edamame, lime juice and a small handful of coriander leaves, stir fry for another minute or two.
  • Serve on top of the soba noodles with extra coriander leaves and lime wedges.
