Breakfast Bagels

  • 2 whole grain bagels
  • 2 small handfuls of baby spinach
  • 1 2 an avocado , sliced
  • 2 thick slices of a large tomato
  • A couple of slices of red onion (optional)
  • 2 large free range eggs
  • 2 small handful of cress
  • Hot sauce
  • Sea salt & black pepper
  • 1 tsp apple cider vinegar


  • Bring a large saucepan of water to a simmer, add the vinegar, whisk the water so there is a well in the middle. Firstly break one egg into a small bowl then pour it into the well. Cook for about 4 minutes. Repeat with the next egg.
  • Toast your bagels.
  • Start to build your breakfast bagel, start with the spinach, then the tomato, onion, avocado, poached egg and cress. Then add some splashes of hot sauce and season with sea salt and some freshly ground black pepper.
