A simple caprese salad with avocado and courgette.

Ingredients

  • 250 g / 1 ¼ cup of tomatoes on the vine sliced
  • 200 g / 1 cup of tricolour cherry tomatoes on the vine cut in half
  • 1 large courgette shaved into ribbons
  • 200 g / 1 ½ cup Bocconcini or 1 ball of mozzarella torn.
  • 1 large ripe avocado cut into slices.
  • 1 handful of fresh basil leaves
  • 50 g / ⅔ cup lamb's lettuce (optional)
  • ¼ teaspoon sea salt
  • 50 ml / ¼ cup pf extra virgin olive oil
  • ½ teaspoon Balsamic vinegar
  • ¼ teaspoon Freshly ground black pepper.

Instructions

  • Arrange all the vegetables and cheese on a serving dish, sprinkle over the sea salt and black pepper and serve with the oil and vinegar.
