Oat, Date and Peanut Butter Power Balls

Sweet gooey and filling these power bites are easy to make and great for a healthy snack.

Ingredients

  • 1 cup jumbo oats (100g)
  • 180 g medjool dates , roughly chopped
  • 2 tbsp dried cranberries
  • 1 tbsp pumpkin seeds
  • 3 tbsp smooth peanut butter (sugar/salt/palm oil free, 100% peanut butter)
  • 2 tbsp water

Instructions

  • Soak the cranberries in warm water for 2o minutes, then rinse them in water.
  • Add all the ingredients to a food processor, blitz until everything is combined and is almost forming a ball.
  • Shape into little balls, by rubbing a tablespoon of he mixture between the palms of your hands. Place on a lined baking tray and let them cook in the fridge for 10 minutes.
  • Place in an airtight container in the fridge and they will keep for 3-4 days.
