Equipment

  • Air Fryer I use a Ninja Max basket-style air fryer with a 4L capacity.

Ingredients

  • 750 g 1 lb of baby potatoes
  • 2 cloves of garlic minced or put through a garlic press
  • 1 teaspoon fresh rosemary finely chopped
  • 1 ½ teaspoon fresh thyme leaves finely chopped
  • ½ tablespoon olive oil I use light olive oil for this recipe
  • ¼ tsp freshly ground sea salt + more for serving
  • ¼ teaspoon freshly ground black pepper + more for serving

Instructions

  • Preheat the air fryer. Set the temperature to 200°C/ 390°F and set the time to 10 minutes.
Wash the potatoes in cold water then pat them dry with paper towels or a kitchen tea towel.
Transfer the potatoes to a large bowl and add the olive oil, herbs, salt and pepper.
  • Toss the potatoes well so that each potato is covered in oil and herbs.
  • Tip the potatoes into the air fryer basket. Return the basket to the air fryer then set the temperature to 200°C / °390°F and cook for 20 minutes. After 10 minutes remove the basket and give the potatoes a good shake. Return the basket to the air fryer and cook for the remaining time.
The potatoes should look crispy and a deep golden brown on the outside and be fork tender, test them with a sharp knife, the knife should go easily into the potato.

Notes

  • Do I need to soak the potatoes first? - No you don't need to soak the potatoes, if you want crispy baby potatoes then you will need to soak the potatoes.
  • Should I parboil the potatoes first? No, there's no need to parboil or boil these before you air fry them.
  • Can I freeze these? No, these are best eaten fresh but you can save leftovers to be eaten in the next few days.
  • Storage - Any leftovers can be stored in an airtight container in the fridge and should be used within 3 days. You can reheat these in the air fryer using the reheat option.
