Air Fryer Potato Wedges

Seasoned Air Fryer Potato Wedges crispy and light and fluffy on the inside. Really easy to make these homemade potato wedges are the perfect side dish or a tasty snack!

Equipment

  • Air Fryer I use a 4 litre basket style air fryer

Ingredients

  • 800 g / 1.7lb potatoes washed then cut into wedges of a similar size
  • tablespoon olive oil you can use vegetable/sunflower oil if you prefer
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt flakes + more for serving
  • ¼ tsp freshly ground black pepper + more for serving

Instructions

  • Wash the potatoes and leave the skin on.
    Cut the potatoes into wedges: cut each potato in half lengthways, place one half cut side down n a chopping board then cut that in half. Cut the remaining wedges in half again. Repeat for each potato.
    Place the wedges in a large bowl and cover them in cold water. Leave them to soak for at least 30 minutes, longer if you want to.
  • After 30 minutes drain the potatoes and rinse them in cold water.
    Dry the potatoes using a clean tea towel or cloth.
    Clean the bowl then add 1½ tablespoons of oil to it along with 1 teaspoon of dried oregano, 1 teaspoon of smoked paprika, ½ a teaspoon of garlic powder, ½ a teaspoon of sea salt flakes and ¼ teaspoon of freshly ground black pepper. Mix everything together.
    Add the potato wedges to the spice mix then use your hands to toss the wedges into the oil and spice mix.
    Make sure all the wedges are covered in the spice mix.
  • Tip the wedges into your air fryer basket.
    Cook at 200°C/400°F for 25 - 30 minutes.
    Remove the basket and shake the wedges every 5 minutes for best results.
    Check that the potatoes are cooked by carefully piercing a sharp knife through one or two wedges. The knife should go into the wedges easily.
    Serve with extra salt and black pepper and a scattering of freshly chopped parsley if you like.

Notes

  • Why do I have to soak the potatoes first? For best results, I recommend soaking the potatoes to remove some of the starch. This will result in the wedges being crispy but fluffy on the inside.
  • Do I have to preheat my air fryer first? No, there is no need to preheat.
  • Do I have to season these wedges? -No, you can ditch the spices and go plain with just salt and pepper. We love this option too, it's great if you're serving these with something really spicy.
  • What Air Fryer do you use? - I have a Ninja Max, basket-style air fryer that has a capacity of 4L.
