Air Fryer Sweet Potato Wedges

Ingredients

  • 3 medium/large sweet potatoes scrubbed clean
  • 1 tablespoon cornflour (cornstarch)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon dried coriander
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Scrub and thoroughly dry the sweet potatoes. Then place the sweet potato on a cutting board, cut each potato into half lengthways, and next cut each half into quarters.
  • Place the potato wedges in a large mixing bowl, add a tablespoon of cornflour and toss well. Making sure each and every wedge is covered in the cornflour.
  • In a small bowl mix the spices and herbs together. Add a tablespoon of olive oil to the spices and stir well.
    Add the oil and seasoning mixture to the sweet potatoes. Toss well, making sure the wedges are covered in the mixture. Season with salt and pepper.
  • Place the wedges in the air fryer basket, no need to keep them separated. Cook at 200°C (390°F) for 20 minutes. Remove the basket from the air fryer halfway through cooking and give the basket a little shake. Return the basket to the air fryer and cook for the remaining time.
    The wedges are done when they are crispy on the outside adn soft and tender on the inside. To check that they are cooked use a sharp knife to pierce one or two.

Notes

  • Size Matters - Ensure the sweet potato wedges are cut into even thicknesses so they cook evenly. Larger wedges will need longer, and smaller wedges will need less time.
  • Do not overcrowd the air fryer basket. Depending on the size of your air fryer you may need to cook the wedges in batches if needed. If you do this will increase the cooking time.
  • I don't soak these wedges. Sweet potatoes have a lower starch content so there is no need for soaking before you cook them.
  • I don't preheat my air fryer, the model I use doesn't require preheating. If you cook these in batches the second batch will probably need 1-2 minutes less cook time. So please do bear that in mind.
  • My Air Fryer - I use a Ninja Max, basket-style air fryer that has a capacity of 4L.
  • Every air fryer cooks differently. From my experience, different brands, styles and capacities can vary in cooking time. This means that your food may need a longer or shorter cooking time, so keep an eye on them. If they look cooked before the recipe time states test them with a sharp knife. If the knife goes through easily and the wedge feels tender then it is cooked.
