    Vegetarian meal plan

    I've been meal planning for years, it's a great way to reduce food waste and stick to a weekly budget. I make one every week to plan the main meals for our family. Family meal planning doesn't have to be difficult, so I've created new weekly menus for four to work around your family's busy lives.

    This week's meal plan includes our favourite pasta salad, a mushroom sandwich that is to die for and my favourite tofu recipe of all time!

    ⭐️ Why Meal Planning Works

    • It helps you budget for the week and not overspend at the supermarket.
    • Meal planning will help to reduce food waste.
    • It takes the stress out of that lovely question "What's for dinner?"!

    ⭐️ Top Tips

    • Check your cupboards - before you go shopping check your cupboards as you may already have some of the ingredients needed.
    • The orzo salad is great for bringing to work, for a BBQ or a picnic. It's easy to batch-cook this if you're feeding a crowd!
    • Mushroom Burgers - serve these with your favourite fries or try my baked potato wedges.
    • Sesame Tofu - drain and press the tofu in the morning or the night before to save some time.
    • Halloumi Tray Bake - this is great for an end-of-week dinner to use up any veggies that are a little bit worse for wear.

    DINNER 1

    ⭐️ I make this pasta salad almost every week, it's great warm or cold and perfect for school lunch boxes too! You can easily double this up to food a crowd!

    DINNER 2

    ⭐️ A reader favourite this sandwich is packed with juicy roasted mushrooms and a pesto mayo sauce. Serve with your favourite fries or my air fryer wedges for an easy veggie dinner. This recipe can easily be adapted to serve 4.

    DINNER 3

    ⭐️ We love this Halloumi Tray Bake, it's such a tasty midweek dinner. It's also great for using up odds and ends of veggies hanging around the fridge.

    DINNER 4

    ⭐️ This is another family favourite in our house. You can serve this with a simple green salad or some potato wedges. The leftovers are great cold too!

    DINNER 5

    ⭐️ This takes a little longer but it is definitely worth the wait! The tofu is pan-fried until crispy then coated in a sweet but spicy sticky sauce and stir-fried peppers. Serve with basmati rice.
