    Halloumi Burgers

    These halloumi burgers are hands down one of the best veggie burgers I have made yet, even the devout beef burger eaters in my family loved them, and they are very fussy about their burgers, trust me!

    Salty, sesame-crusted halloumi, fried until golden, served with meaty, juicy mushrooms, topped with red onion, rocket and coriander then finished off with a good helping of sticky, sweet and spicy mango chutney sauce, this is a burger with heaps of flavour.

    Ready in under 30 minutes these halloumi mushrooms burgers make for a quick and tasty dinner for meat-free Mondays or if you have veggie friends coming round for a bbq these will definitely impress your guests.

    How to Make Halloumi Burgers

    1. Start by cooking those mushrooms. Preheat the oven and roast the portobello mushrooms until they are nice and juicy.
    2. Coat the halloumi slices with the whisked egg wash,
    3. Sprinkle some sesame seeds over the halloumi and press them into the cheese.
    4. Make the sauce, add the mango chutney, apple cider vinegar and water. Cook that up in a pan until it is thick and sticky.
    5. Cook the halloumi until each side is golden brown and a little bit crispy around the edges.

    How to Assemble Your Burgers:

    Toast up some burger buns, add arugula/rocket, sliced red onion, tomato and then top with a whole mushroom, a slice of that crispy halloumi. Add a tablespoon or two of that sticky sauce, remember to be generous with that sauce, then add some coriander and you are done!

    Tips for Making the Perfect Halloumi Burger:

    • Dry the halloumi with some kitchen paper before you coat it. I use full-fat halloumi, always!
    • Pick the freshest portobello mushrooms, medium mushrooms are perfect for this if they are too big they will overtake the halloumi.
    • Use a good quality mango chutney. If you can, buy the best chutney you can get your hands on. The chunky stuff is the best! This is our favourite Mango Chutney

    What to Serve with Halloumi Burgers

    These burgers are great served with some, potato wedges or homemade fries and Greek salad. These really went down well with the kids, you can reduce or omit the chilli flakes for little ones if you want. But for older kids and for adults I'd definitely leave them in, they really give the sauce a nice kick.

    Ingredients

    • 1 8oz pack of halloumi (225g) cut into slices
    • 1 egg yolk
    • 1 tbs water
    • 2 heaped teaspoon sesame seeds
    • 4 medium portobello mushrooms wiped clean
    • 1 tbs olive oil
    • ¼ teaspoon of sea salt
    • ¼ teaspoon cracked black pepper
    • 4 brioche burger buns
    • 1 small red onion peeled and sliced
    • 1 large beefsteak tomato / beef tomato cut into slices
    • A small handful of cilantro / coriander leaves
    • A handful of arugula / rocket

    FOR THE SPICY MANGO CHUTNEY SAUCE

    • 4 heaped tbsp of good quality mango chutney
    • ¼ teaspoon red chilli flakes
    • 1 tbs apple cider vinegar
    • ⅓ cup of water (80ml)
    Prevent your screen from going dark

    Instructions

    • Preheat the oven to 392 degrees F / 200 degrees C
      Place the mushrooms on a baking tray, drizzle over the tablespoon of olive oil and season with ¼ teaspoon each of salt and pepper. Cook for 10 minutes then turn them over and cook for another 5 minutes.
    • Whisk the egg yolk and water together, brush each slice of halloumi with the egg yolk then spread some sesame seeds over each side, press the seeds into the halloumi.
    • Add the halloumi to a medium hot skillet and cook each side for about 5 minutes, they are done when they are golden brown. Keep warm until ready to use.
    • On hot griddle pan toast the burger buns, cut side down, until they are golden brown.

    TO MAKE THE SPICY MANGO CHUTNEY SAUCE:

    • In the same skillet you used to cook the halloumi, add the mango chutney, chilli flakes, water and apple cider vinegar, stir well and bring to the boil, cook over a medium heat until it reduces to a sticky sauce, about 10 minutes.
    • To serve, place the arugula / rocket on the toasted burger bun, top with red onion slices, the halloumi cheese and a good dollop of spicy mango chutney sauce, and some coriander leaves. Finish with the remaining burger bun.
      Serve immediately with some chips and salad.

    Notes

    • Nutritional Information is approximate and is calculated using an online nutrition too. The information listed includes the burger buns and the chutney sauce.

    • Use a good quality mango chutney. If you can, buy the best chutney you can get your hands on. The chunky stuff is the best!
    • I used brioche burger buns for these but any burger bun works perfectly.
    • Make it Vegan, to make this burger vegan swap the halloumi for your favourite vegan "halloumi". Also, make sure that the chutney you use is vegan.
    • Make it Gluten Free, just use your favourite gluten-free burger buns!
    • Storing and Freezing: This is best made fresh and eaten hot. I don't recommend freezing these burgers. It is possible to reheat the contents of the burger, you can reheat the mushroom and the cheese on the hob. Please note that there may be some changes in the texture of the mushrooms and the cheese if you do reheat this.

      Fabulousness! I'm not a huge meat eater, and when my husband makes burgers, I have more lettuce and tomato on them than burger! I would really love these. Not sure, personally about the sesame seeds, but love the chutney!

      I am LOVING the look of this. I was never a big haloumi fan but I’ve been getting into a bit more now I am living in Oz. Pairing it w/ mushrooms and putting it in a burger is 100% a win in my books!!

      Thank you for sharing this simply delicious “burger!” I did not use portabello mushrooms as I suspected their salty flavor would overshadow the seasame, cheese and chutney combo. I used mini portabellos and roasted three quartered Brussels along with the shrooms for the side.

      Outcome: a divine hearty and flavorful meal!

      These sound divine. One of my kids does not eat beef, though she's not (yet) vegetarian. I think she would be delighted with these and it's a sneaky way to get some more seeds into her diet.

        Loved this Burger. I used ciabatta rolls and unfortunately I didn't have any mango chutney so I used caramelised onions instead and I loved the combination.
