These easy-to-make dinners can all be made with just a few simple ingredients. From pesto gnocchi to halloumi fajitas,a cold noodle salad, a great curry and an easy Quorn chilli. - Have a well-stocked pantry - ensure you have a good collection of spices that you use regularly. Also, you will need a variety of oils, different types of vinegar and canned goods.
- Check the cupboards before you shop - I do this every single week, in fact, I double-check it against my shopping list! You'll be surprised at what you already have hiding in your cupboards!
- Double up - Some recipes will be easy to double up on the quantities, you can freeze these for next week or pop any leftovers in the fridge for lunch!

🍽 Weekly Meal Plan Recipes
⭐️ DINNER 1
This is made with homemade parsley pesto but you can use store-bought green pesto to save time. This dish is a lovely summery dinner that can easily be adapted to serve 4 or more.

No need for spice mixes here these tacos have a homemade spice mix and it goes perfectly with the crispy halloumi.

This noodle salad is great for when the weather picks up. It serves 6 so I recommend saving some of this for lunch the next day.

For this curry, the aubergine is roasted and then added to a rich curry sauce with chickpeas and spinach. As with all curries, the leftovers taste amazing so I would save some for lunch too.

This quick and easy chilli is perfect for a Friday night dinner. Just serve it with rice and a dollop of guacamole for a filling and tasty weeknight dinner.
