- Have a well-stocked pantry - ensure you have a good collection of spices, you will use these regularly. Also, you will need a variety of oils, different types of vinegar and canned goods.
- Check the cupboards before you shop - I do this every single week, in fact, I double-check it against my shopping list! You'll be surprised at what you already have hiding in your cupboards!
- Double up - Some recipes will be easy to double up on the quantities, you can freeze these for next week or pop any leftovers in the fridge for lunch! In this week's plan, the Veggie Pasta Bake is great for lunch the next day!

Ready in under an hour this veggie pasta bake is one of my family's favourites. It's packed with veggies in a tasty homemade tomato sauce and topped with plenty of cheese!

This is the ultimate throw-it-together dinner! Highly adaptable you can add almost any veg to this and it will still taste great. This dish is also great for feeding a crowd as you can easily bump it up to feed more people.

This is one of my favourite ways to enjoy aubergines. The saltiness from the miso and the sweetness from the roasted aubergines go hand in hand to create a truly delicious flavour. Serve with white steamed rice and broccoli for a very tasty dinner.

This halloumi curry is the perfect weeknight curry. With crispy halloumi, chickpeas and baby spinach in a rich slightly spicy sauce this curry is perfect for the whole family. It's ready in under an hour and the leftovers are great too!

One of the most popular quiche recipes on my site this courgette quiche is easy to make and is so tasty. I use store-bought pastry for this one to keep the time down. This quiche is great for Sunday lunch, BBQs or for taking on a picnic.
