- Have a well-stocked pantry - ensure you have a good collection of spices, you will use these regularly. Also, you will need a variety of oils, different types of vinegar and canned goods.
- Check the cupboards before you shop - I do this every single week, in fact, I double-check it against my shopping list! You'll be surprised at what you already have hiding in your cupboards!
- Double up - Some recipes will be easy to double up on the quantities, you can freeze these for next week or pop any leftovers in the fridge for lunch! In this week's plan, the quinoa and chickpea salad is great for lunch the next day!

One of my favourite summery pasta dishes this is so easy to make and tastes great!

Topped with crispy chickpeas, creamy goat's cheese, spring onions and a tangy thyme, lemon and garlic yoghurt sauce these baked sweet potatoes have all the flavours and goodness of the Mediterranean. Serve with a green salad for dinner.

When I want something light for dinner this is what I have. There is hardly any cooking involved and it's perfect for when you're busy!

Made with homemade falafel and served in a flour wrap with baby gem lettuce, slices of cucumber and cherry tomatoes. The sauce really makes this a mouthwatering, flavour bomb! Serve with my air fryer potato wedges or a hearty dinner.

⭐️ DINNER 5
This is one of our favourite pizzas, the base is light and crispy, the ricotta on the base is creamy and garlicky, and the mozzarella ends up a lovely bubbly golden brown. Spinach is my healthy addition and those bursting cherry tomatoes are juicy and delicious. Serve with a green salad and my Air Fryer Garlic Bread for a tasty pizza night!
