Hey there, and welcome to the very first Weekly Meal Plan on The Last Food Blog. If you're wondering what's going on I asked my followers on my facebook page if this is something they would like. The response was an overwhelming yes! So here it is. I know, like us, everyone is very busy during the week, so I've tried to keep this plan a quick and easy one.
I religiously plan our meals out for the week, and I've been doing this a long time now. I find it helps with reducing food waste, saving money and it reduces the chances of buying takeaways or junk food. It keeps us all on track for the week. I have this on a blackboard in my kitchen so everyone knows what's for dinner!
I really hope you find this useful. Toward the end of this page, I have included a shopping list and a store cupboard list. It is really helpful if you have a well-stocked cupboard. Mine is stocked with everything from the essentials like oil, spices, dried herbs, different kinds of vinegars to grains, nuts and seeds. I have included rice in this list as this is something I always have in my cupboard. If you follow along weekly you will have a great store cupboard in no time!

Monday - Vegetable Fajitas
Fajitas are a great way to get more veggies into the kids, most kids can’t help but love messy finger food and who can blame them. What’s better than building your own fajita? Fajitas have been one of my daughter’s favourite dinners since she was able to hold a taco. These easy sheet pan veggie fajitas are packed with flavour. The vegetables are roasted in a slightly sweet slightly spicy marinade. No store-bought fajita mix either, we always make our own spice mixes. They are so easy to make and are ready in 20 minutes. Tuesday - Chickpea and Lentil Curry
This curry is packed with goodness, chickpeas, red lentils, spinach and peppers! And because of all the protein, this curry is super satisfying and filling. Warmly spiced with a little kick of heat this is packed with flavour. You’ve probably heard me say this already but curries are a weekly occurrence in my house. Everyone in my family loves them, and since we went veggie they have become even more popular. This chickpea and lentil curry is one of my favourites, not just because it tastes great but also because it’s ready in no time and all I need are store cupboard ingredients! Wednesday - Courgette Risotto
I’ve been making risotto for years, my family loves it. There’s nothing better on a chilly evening than a big bowl of steaming hot, creamy risotto. This courgette risotto is exactly that, with peas, lemon and pine nuts this is perfect comfort food. I know risotto recipe takes a little longer to make, but some things are definitely worth waiting for. And this courgette risotto recipe is no exception. Yes you need to stand over it, yes you need to stir it and yes it takes time. But as far as I’m concerned a good risotto is worth the time it takes to make it. Get the recipe here: Courgette Risotto
Thursday - Spiced Carrot and Lentil Soup
This spiced carrot and lentil soup is like a lovely hug in a bowl! Cosy, warming, filling and easy to make, it’s the perfect soup for chilly Autumn days. Packed with warming spices like garam masala and cumin and with a gentle hint of chilli this soup is a treat for the senses. I love the aroma that fills my kitchen when I make this! Friday - Olive and Artichoke Naan Pizza
Artichoke and olive naan pizza, ready in 20 minutes and perfect for dinner in a hurry! Great for a Friday night treat. These are so easy to make and taste amazing! - 3 x medium brown onions
- 1 x red onion
- 1 x bunch of celery
- 1 x bulb of garlic
- 1 x red bell pepper
- 1 x green bell pepper
- 1 x yellow bell pepper
- 1 green chilli pepper
- 1 x thumb-size piece of fresh ginger
- 3 x large portobello mushrooms
- 1 avocado
- 1 x pack of spinach (75g)
- 1 medium courgette
- 3 x large carrots
- 1 x pack of fresh flat-leaf parsley
- 1 small packet of fresh thyme
- 1 small pack of fresh coriander/cilantro
- 2 x limes
- 3 x lemons
- 2 x 400g cans chopped tomatoes
- 1 x 400g can of cooked chickpeas
- 1 x jar of green pesto (vegetarian)
