    7 Easy Vegetarian Store Cupboard Meals

    Here is a round-up of some of our favourite go-to meals. These are the store cupboard meals I make on a regular basis. They're easy to make, budget-friendly and more importantly, they're really tasty!

    Vegetarian Chili

    I make this almost every week. You can adapt and adjust it to suit whatever spices you have in the cupboard. The basic spices you will need though are ground cumin, ground coriander and dried oregano. If you don't have a fresh chilli you can substitute in red chilli flakes. We usually have this with rice and any leftover are great over a baked jacket potato.

    Veggie Bolognese with Lentils

    This veggie bolognese is great for batch cooking or freezing. Again you can add in different veg here if you need to. You can swap the pup lentils for a can of cooked lentils or add dried split lentils if needs be. If you don't have passata two tins of chopped tomatoes works perfectly. Not got porcini mushrooms? That's fine I've made this without them plenty of times and it's still great! You can serve this with any long pasta, tagliatelle or linguine are fine or short pasta such as penne or fusilli.

    Vegetable Fajitas

    This is another really adaptable recipe! You can use a store-bought spice mix if you have it if not the spices in this are great for all types of tacos or fajitas. You can use regular mushrooms if you haven't got portobellos and I sometimes add in a can of black beans or red kidney beans. Tortillas are a great a store cupboard ingredient, there's so much you can do with them! Use them for lunches or for making pizzas!

    Cauliflower and Chickpea Curry

    This is one of the most popular recipes on the blog, it's easy to make, can be made ahead and can be frozen. It's family-friendly as it's not too spicy but you can easily make it hotter if you want. You can substitute the fresh cauliflower for frozen and swap the chickpeas for butter beans or any other white beans you may have.

    Broccoli Pasta Bake

    This is a new family favourite, it's creamy, cheesy comfort food! You can swap the fresh broccoli for frozen and use any short pasta, penne, rigatoni, fusilli. This pasta bake is easy to make and tastes delicious.

    Vegetarian Toad in the Hole

    This is a great store cupboard meal. You can switch up the herbs to whatever you have, rosemary works great instead of thyme. Dried thyme works well too if you have it. You can use frozen vegetarian sausages if you need to and frozen peas are great as a side dish but any frozen veg works.

    Naan Pizza

    The week wouldn't be complete without pizza in our house! These pizzas are really flexible. If you don't have artichokes red onions, mushrooms and feta work great too! If you don't have naans then tortillas work well too.
